Are you ready girl? All right, I want to share with you this easy pumpkin chocolate chip cookies recipe and show you this version of chocolate chip cookies that I looooove. I must say that I tried these pumpkin chocolate chip cookies a couple of times and the first two times did not look like that at all haha. Although I almost followed the recipe step by step, I think it was the temperature of the oven that did not help. I have an old oven which makes a bit hard to control the temperature. - 1 2/3 cups of all-purpose flour
- 1/4 teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 teaspoon of baking powder (If you don’t have baking soda, then add 3 teaspoons of baking powder, which is 1 tablespoon)
- 1/4 teaspoon of ground nutmeg (optional)
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of ground cloves (optional)
Take a whisk and we’ll just whisk this together. You can also just throw all these ingredients into a sifter as well. Perfect. Set this aside.
Wet Ingredients:
- 2/3 cup of softened butter (unsalted or salted)
- 1/2 cup of white granulated sugar
- 1/2 cup of light brown sugar
In a large bowl, add the butter and sugars. Break this up a little bit. Then with a hand mixer, stand mixer, or wooden spoon, cream these together. Add:
- 1 large egg
- 1 teaspoon of vanilla extract
- 2/3 cup of pure pumpkin (canned pumpkin or homemade pumpkin puree)
Give this a mix just until combined. Use a spatula to scrape down the sides and make sure it all gets mixed evenly.
Combining Ingredients: Incorporate the dry mixture into the wet mixture, about a third of it at a time. Scrape the bowl to ensure everything is mixed in. Clean the beaters and scrape everything together.
Adding Chocolate Chips:
- 1 cup of chocolate chips (you have several options here, and you can choose between milk, semi-sweet, or dark)
Add the chocolate chips, reserving a couple of tablespoons to put on top later. Mix them in.
Baking Instructions for the pumpkin chocolate chip cookies
Well, at this moment you should preheat the oven to 350 degrees Fahrenheit (or 176 Celsius). Prepare an ungreased sheet pan. Use two tablespoons to drop the cookie batter onto the sheet pan, placing them about 2 inches apart. You should be able to get 10 cookies on one normal sheet pan. Add a few more chocolate chips on top. Bake at 350 degrees Fahrenheit (176 Celsius) for 14 to 17 minutes, or until they are nice and golden brown. When poked with a toothpick, it should come out clean. Let them sit on the pan for about five minutes, then transfer them to a wire rack to cool completely. They should not stick too much to the pan, but you can use parchment paper or a silicone baking mat if desired.
